Located in Pitalito, Huila, El Mirador is a 32-hectare estate led by Elkin Guzman, whose family boasts over 70 years of coffee heritage. The farm is a hub for botanical diversity, cultivating everything from staple Caturra to exotic varieties like Gesha and Mokka. Elkin has dedicated over a decade to researching post-harvest processing, utilizing a data-driven approach to ensure every lot reaches its maximum potential.

This specific lot features Orange Bourbon, a natural mutation that arrived at El Mirador following a seed exchange with the famous Finca Los Pirineos in El Salvador. To ensure peak quality, Elkin’s team strictly harvests cherries with a sugar content of 20–24° Brix, followed by rigorous density and volumetric sorting to maintain consistency across the harvest.

The coffee undergoes Elkin’s signature Natural Hydro Honey process, a sophisticated multi-stage technique. It begins with a natural fermentation where whole cherries dry on raised beds for up to 12 days. The cherries are then rehydrated in fresh water to soften the skin for clean depulping, before undergoing a final 25-day "honey" drying phase while still coated in their natural mucilage.

The result is a pioneering cup that captures the best of both worlds. By combining these meticulous fermentation and drying techniques, the process highlights the deep, jammy fruitiness typical of a natural coffee while maintaining the sparkling clarity and refined balance of a honey process.
